Old School Vegan Meets New School Vegan: Engine 2 Chocolate Pudding Recipe

Anyone remember the old school (mostly vegan) classic, Tofu Cookery (1982)  by Louise Hagler? Before there was Isa Chandra Moskowitz, before everyone thought that tofu was Satan and gave you manboobs/zombified your thyroid, there was good old Louise and her tofu magic:

I can’t even begin to tell you how many freaking hours of my life I spent in the 90’s trying to perfect a vegan cheesecake recipe using this book. Back then, there was NOTHING. You had Gardenburgers, tofutti ice cream, Westsoy soy milk (gag me with a biodegradable spoon) and lots and lots of hummus. Probably about a handful of vegan cookbooks…it was grim times.

I love the Engine 2 “Diet” and that is mostly how I eat (the occasional teaspoon of Earth Balance coconut spread and sprinkling of Teese aside). I have been wanting some pudding lately, and chia pudding is just too hippie nasty even for yours truly. I dug out good old Louise to see if I could modify one of her recipes to be E2 compliant:

Engine 2 Chocolate Pudding


Two 15oz containers of soft tofu (do NOT substitute other kinds; soft tofu has the ideal pudding texture)

1 cup Truvia or 1 1/4 cup unrefined sugar

1/3 cup Wonderslim cocoa powder

1/4 cup water

1/4 tsp salt

3 tbs arrowroot powder or cornstarch (I use arrowroot); for thicker pudding, increase to 4tbs arrowroot

Put water, salt and half of the sugar and cocoa into your food processor or Vitamix and blend. Slowly add in the tofu a little bit at a time. Once you’ve put about half in, add the rest of the cocoa and sugar in small increments. Add the rest of the tofu and blend completely. Once the pudding is a smooth consistency, add in the tablespoon of arrowroot powder and blend completely. Chill until firm, which takes about 3-4 hours. Eat and watch your boobs grow right before your eyes! (only kidding)
